Vegetable soups are one of my favorite meals to prepare with vegans because of the richness of the flavors and texture.
This vegan samosa recipe is an easy, delicious recipe for vegans that can be prepared in about 30 minutes and serves up to 4 people.
Vegetables, beans, and lentils are the main ingredients in this samosa.
A little goes a long way, but you can make this with any kind of meat.
A lot of people use soybeans and rice in this recipe, but if you’re vegetarian, try substituting some of the veggie protein.
The vegan version is also a good substitute for meatballs.

This recipe makes enough for 6 to 8 people, but a couple of folks can have a big appetite.
If you want to keep the samosa filling small, add in a few vegetables, beans or lentils.
I’ve also included a photo of the vegan version to show you how to make this vegan samoshas filling.
Vegan Samosas can be made in the oven or at room temperature.
You can also make the samosas ahead of time and freeze the filling for later use.
The freezer will keep the filling moist and crunchy for a few days.
To make the veg filling, combine the vegetable broth, salt, black pepper, and 1 tablespoon of brown sugar in a large bowl.
Add the tofu, soy sauce, and sugar to the bowl and stir to combine.
Add in the chopped vegetables, soybeans, lentils, and beans.
Using a slotted spoon, mix until all the ingredients are well combined.
The mixture will be thick and have a nice consistency.
It’s ready when it’s no longer lumpy or has a nice crumbly texture.
If the mixture is too runny, add a little more liquid.
This vegan samosa recipe is very easy to make and can be served with salad, soup, rice, or pasta.
If using lentils instead of soybeans in this vegan version, add them as well.
Serve the samosesas warm or cold.
